Mexican Cuisine

Mexican cuisine starts with the locals living in the region, from the Aztecs to the Mayans, corn, beans and tropical fruits grown in that region, then the food culture comes to the country with the invasion of the Spanish. With the Spaniards comes not only the Spanish cuisine, but also the Arab cuisine culture. Caribbean cuisine, which is one of the close neighbors, is also mixed with Mexican culture, and today, Mexican dishes that the whole world enjoys are emerging. Mexican cuisine was included in the UNESCO World Heritage List in 2010.

Tortilla

The most important ingredient of Mexican cuisine is tortilla. Tortilla is to Mexico what bread is to us. Meals are either made with tortilla or eaten with a tortilla. Tortilla is a round, 20 cm diameter lavash slightly thick bread made mostly from cornmeal. I mostly say cornmeal because the main ingredient of Mexican cuisine is corn and if you don't specify otherwise, the tortilla that will come to your table will always be corn bread. There are also ones made with white flour, in some restaurants you can find the white flour option on the menu, but if you like street food, be ready for cornbread.

Tortilla should not be overlooked, if it is made from black corn (because black corn is grown in Mexico), your taco will be a color close to black.

Taco

Mexican food – Tacos

Taco is the main dish of Mexican cuisine. Add all kinds of tortillas and sauces into the tortilla and eat it, bon appetit. It's usually made with a thin layer of guacomelo sauce on the tortilla, whatever you choose as the main ingredient (chicken, meat, fish, anything) on top of that, usually a salsa sauce or salad. Hundreds of varieties of tacos are made in Mexico, from doner kebab to vegetarian.

In the photo below, you see the beef stomach and intestines on the left, and the tacos made with the beef head you see on the right.

Usually, not much spice is added to the taco material, including salt. Hot and non-spicy sauces and salad options are usually served as an open buffet, as you can get as much as you want. If there is no buffet, there is lime (wild lemon) and 2 kinds of sauces on the tables. You make the combination you want, in the amount you want, by yourself. If you are a person like me who cannot eat a lot of pain, you can adjust the amount according to yourself.

Nachos

Nachos are the corn chips we know, not like the ones we buy from the market, but the one made in a more natural way, a little thicker and more crunchy. Nachos usually come with different sauces before meals, it is perfect to eat with nachos. If it doesn't come, you can order it with your beer or margarita.

Chilaquiles

Nachos also have uses in food. For the Chilaquiles dish, they whisk and cook the nachos with eggs, cheese and cream, it's a great breakfast.

It is a great option for those who are wondering what to eat for breakfast in Mexico.

Toast

The fried version of taco is called tostada. The tostada is the size of a taco and the ingredients are exactly the same, but not as soft as a taco. It's pretty tough, so hard you can't bend it. It is much more difficult to contain the ingredients and sauces placed on it. That's why Mexicans say, in Taco or Tostada, don't expect it to fit you from the ground, you have a neck, turn it, go under your neck, get out of the top, don't spill the ingredients.

Downstairs is my shrimp torteman, of course it's not possible to eat it like that, so they give you a fork next to it, you start eating from the top.

quesedilla

If you make the diameter of the tortilla bread 20-30 cm instead of 40 cm, fill it with ingredients and fold it in half, here is the quesedilla for you. Below you see a restaurant quesedilla. The images of street food and the images of those in restaurants are often quite different from each other.

Burrito

A dish that we can call dürüm or wrap with its new name. Again, we have a tortilla like lavash, it becomes Burrito when we fill it with whatever we want and shape it into a burrito.

Enchilada

If you wrap the burrito, dip it in hot pepper sauce and then bake it in the oven or in oil, it's called Enchilada. The main ingredients do not differ in any of these dishes, the way they are cooked or served differs.

Pastor

Pasteur, as we know doner, means shepherd's style. It is said that immigrants from the Middle East taught Mexicans how to make pasteurs. Its difference from the Middle Eastern doner kebab is that cabbage leaves are put in between while the doner is wrapped. There is a pineapple on the doner counter, and a few slices of pineapple are added to the plate on which the pasteuriser is placed.

Fajita

Fajita is actually served in Mexico just like our shepherd's roast. When coming to Turkey, it is necessary to research how to get such a cool presentation.

Barbecue

In very simple terms, the lamb tandoori made in Mexico is called Barbacoa. Although it is mostly found in places similar to roadside trucker restaurants, you can also find it in street vendors and restaurants in the city if you search. We had the opportunity to try it at the Cocayan Market near the Frida Kahlo Museum.

Patty

Empanada, the official pastry of South America, is also eaten a lot in Mexico. It is made with minced meat, potatoes and many different ingredients. Empanada is the general name of pastries that are slightly larger in appearance than our pastry, and their edges are elegantly curled into braids.

Cake

It is made by putting Tacos ingredients in a large sandwich bread. I didn't prefer it much because the bread was too much, Taco has always been my favourite.

Sauces

Mexico – types of sauces

I couldn't get out of this business, there are different sauces made from different kinds of peppers, the most popular being the ones made with Halapeno peppers. In various flavors and colors in the country; More than 90 varieties of pepper are grown.

When you enter big markets, you can find huge sauce shelves like below. We came with 7-8 different sauces.

guacamelo

Guacamelo sauce made with avacado is available almost everywhere. While making tacos, guacamelo sauce is mostly used as a base. However, almost every place makes their own sauces.

Salsa Sauce

Salsa sauce made with tomatoes, onions and mostly coriander is a must. It comes on or next to the food.

In Mexican cuisine, pickles are also a food you can find in many places. In the photo above, there are garlic, carrots and pickled peppers.

Desserts

Desserts didn't leave much of an impression on me in Mexico. I've been chasing Churros quite a bit because they're not available everywhere.

Churros

There is a donut-like donut on our street, make it thin and long, and coat the outside with sugar and cinnamon. Here's Churros for you. It is served with hot chocolate in a small glass alongside this dessert, which you will find very often in Europe. You can eat a banner.

If you ask if there is any other dessert, of course there is. But I can't say I'm chasing after sweets.

Drinks

The question of what to eat and drink in Mexico is very special to Mexico. Tequila, which is made from the world-famous agave plant, is of course identified with Mexico. In addition to tequila, mezcal, margaritas, beer are the drinks you can find almost everywhere in Mexico.

In addition, Mexico is very rich in fruit with the advantage of being tropical. You can find juices made from these fruits everywhere.

There are many types of beer of different brands in Mexico. Corona is the most well-known worldwide, and Sol brand has started to come to Turkey. These beers are slightly lighter, have a lime flavor and are easy to drink. If you ask why are two people drinking 4 beers, there was a Happy Hour, buy one, get one free 🙂

Mexican food made me very happy in general. Although we had a little difficulty in separating the bread and its content on the menu at first, it was easier to order when I understood the logic later.

We used an offline dictionary application in Mexico, so we decided not to have any surprises when ordering food. However, things like veal stomach were not in that dictionary, there were a lot of things we ordered without knowing what we saw and saw in the showcase.

Meal Prices in Mexico

If you ask how much the food prices are in Mexico, it is possible to get enough for either 10 TL or 500 TL. Street food is very diverse and very cheap, drinks are at Turkish levels. If we look at it as an average meal, you can have your drink for 20TL and you can have your drink for 10TL.
