What is Additive Bread?

There is a famous Musa Tree in Hatay's Hıdırbey Village. Hz. It is believed that the Prophet Moses stuck his staff in order to cross the stream and that staff turned into a plane tree. We went to Hıdırbey Village to see that tree, but we got hungry on the way. While we were looking for a snack while we were there, we saw “something” that we thought was a pancake. Resembling pizza and lahmacun a little, the additive bread is consumed at every meal in Hatay. You can always see additives on the menu at breakfast, lunch and dinner. Katikli is also called pepper bread, don't be surprised when you see it!

Where to Eat Solid Bread?

It was my first time to Hatay (2011). When we arrived at Hıdırbey Village, which is one of the places on my route, we only met a couple in front of their house in front of their houses. The man of the house chatted with us while the ingenious woman of the house was working and making her own bread. Both of them were hospitable, talkative and very willing to tell about the places like the local people. It was my first time to eat the bread with additives here and I loved its taste, consistency and crispiness.

On my last visit to Hıdırbey Village (2022), many businesses and places that cook with additives were opened by the stream in Hıdırbey Village. Hıdırbey Village and Musa Tree became a very popular and touristic place, and it was good. Movement and abundance came to the village. The only problem, I think, is that Chinese-made souvenirs are sold at the local product market in the village, anyway, let me not digress.

At the Hıdırbey Gastronomy House, which is a business owned by Hatay Municipality, overlooking the square of Hıdırbey Village, we tasted the bread with spinach, it was very good, we ate our fingers.

There are also bakeries that make additives in Uzun Çarşı in the center of Antakya, you will definitely come across them while walking around the side streets. It is cooked in wood ovens instead of tandoori, of course, but it is still very tasty. In addition, many restaurants have additives on their menu, they also call it pepperoni bread. Everywhere I tried it tasted very good, of course, the one cooked in the tandoor is the best.

As with many bakery dishes in Hatay, you can prepare your mortar with additives at home, take it to the nearest bakery and have your bread baked. In the photo above you see an oven working in this way.

What's in the Added Bread?

The mortar of the bread with additives includes Antakya curd, zahter, pepper paste, olive oil, sesame, cumin and onion. You can vary the spices according to your own taste. The dough of the additive bread is made from wholemeal flour.

If you don't want to deal with preparing your own mortar with additives, you can go to the spice shops in Uzun Çarşı and have a special mortar prepared for you, containing your favorite spices.

How to Make Added Bread?

Let's see how to make solid bread! The original bread with additives is baked in a tandoor oven. You can see a sample tandoor oven in the photo below. If there is no tandoor oven, it is cooked in wood ovens. If you want to cook at home, of course, you can cook it in your oven at home.

Cokelek (surk cheese), Hatay's famous pepper paste, walnuts and plenty of spices are added to the wholemeal dough. It is cooked in a tandoori oven until it is crispy. One of the foods you will never get enough of with just one is Additive. It is so nice to eat it with homemade ayran on the side. Both delicious and healthy…
